Do you sell a conversion kit so that I can put a 700cc wheel on my Catrike Speed?

Yes we do. See our Catrike Extension Kits.

Are these trikes adjustable, i.e., can a single trike fit a 6 foot man and a 5' 4" woman?

Yes. We would want your X-seams to set it up right, but using the Catrike Tensioner would allow you to slide the boom for both of you.

I am a spinal injury rider and have partial use of my right leg, so I can't safely ride a two wheeler. I want to go fast and take day tours, probably nothing more serious than a century. Recommendations?
